- 1 pound jumbo pasta shells
- 1 pound ground lamb
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup chopped spinach
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups marinara sauce
Instructions
2. Cook the pasta shells according to the package directions. Drain and set aside.
3. In a large skillet, cook the ground lamb over medium-high heat until browned and cooked through. Drain any excess fat.
4. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
5. Add the chopped spinach and cook until wilted, about 1-2 minutes.
6. In a large bowl, mix together the ricotta cheese, Parmesan cheese, parsley, egg, salt, and black pepper.
7. Add the cooked lamb mixture to the bowl and stir to combine.
8. Spoon the lamb and spinach mixture into the cooked pasta shells.
9. Spread a thin layer of marinara sauce in the bottom of a 9×13 inch baking dish.
10. Arrange the stuffed shells in the baking dish.
11. Pour the remaining marinara sauce over the stuffed shells.
12. Cover the baking dish with foil and bake for 30 minutes.
13. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
