Ingredients
- 1 pound of skinless, boneless salmon
- 1/2 cup of breadcrumbs
- 1/4 cup of finely chopped onion
- 1/4 cup of finely chopped bell pepper
- 1 egg, beaten
- 1 tablespoon of Dijon mustard
- 1 tablespoon of chopped fresh parsley
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of olive oil
For the Dijon sauce, you will need:
- 1/2 cup of mayonnaise
- 2 tablespoons of Dijon mustard
- 1 tablespoon of honey
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Instructions
2. Cut the salmon into small pieces and place in a mixing bowl.
3. Add the breadcrumbs, onion, bell pepper, egg, Dijon mustard, parsley, salt, and pepper to the bowl. Mix well to combine.
4. Form the mixture into small patties or croquettes, about 2-3 inches in diameter.
5. Heat the olive oil in a large skillet over medium-high heat. Add the croquettes and cook for about 2-3 minutes on each side, until they are golden brown.
6. Transfer the croquettes to a baking sheet and bake in the preheated oven for about 10 minutes, or until they are cooked through.
7. While the croquettes are baking, prepare the Dijon sauce by whisking together the mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper in a small bowl.
8. Serve the salmon croquettes with the Dijon sauce on the side for dipping.
Variations
- Try using different types of fish, such as cod or tilapia, instead of salmon.
- Add some chopped herbs, such as dill or chives, to the croquette mixture for extra flavor.
- Make the Dijon sauce spicier by adding some cayenne pepper.
- Serve the croquettes on a bed of greens or with a side of roasted vegetables for a complete meal.
