What is Birria?
Birria is a traditional Mexican stew, typically made with goat meat. However, you can easily adapt the recipe using beef, lamb, or even a combination of meats. The key to amazing birria lies in the slow cooking process, which allows the meat to become incredibly tender and absorb the complex flavors of the chiles and spices.
Ingredients You'll Need:
This recipe yields approximately 12 birria tacos. Adjust quantities as needed.
For the Birria:
- 3 lbs beef chuck roast (or other suitable cut), cut into 2-inch chunks
- 1 large onion, roughly chopped
- 4 cloves garlic, minced
- 2-3 guajillo chiles, stemmed and seeded (adjust to your spice preference)
- 2-3 ancho chiles, stemmed and seeded (adjust to your spice preference)
- 1 pasilla chile, stemmed and seeded (adjust to your spice preference)
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- 2 cups beef broth
- 1 cup orange juice
- 1/2 cup apple cider vinegar
- Salt and pepper to taste
- Vegetable oil
For the Consomé (Birria Broth):
- Leftover birria cooking liquid
- Additional beef broth (as needed)
- Corn tortillas
For Serving:
- Chopped cilantro
- Chopped white onion
- Lime wedges
- Your favorite toppings (e.g., queso fresco, pickled onions, salsa)
Instructions:
Step 1: Prepare the Chiles
- Rehydrate the chiles in hot water for about 20 minutes, or until softened.
- Blend the chiles with the onion, garlic, cumin, oregano, smoked paprika, and cayenne pepper (if using) until smooth.
Step 2: Sear the Beef
- Season the beef chunks generously with salt and pepper.
- Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
- Sear the beef chunks in batches until browned on all sides. Remove from the pot and set aside.
Step 3: Braise the Beef
- Add the chile paste to the pot and cook for a few minutes, stirring frequently, until fragrant.
- Return the seared beef to the pot.
- Pour in the beef broth, orange juice, and apple cider vinegar.
- Bring to a boil, then reduce heat to low, cover, and simmer for at least 3 hours, or until the beef is incredibly tender and easily shreds. The longer it simmers, the more flavorful it becomes!
Step 4: Shred the Beef
- Remove the beef from the pot and shred it using two forks.
Step 5: Prepare the Consomé
- Strain the leftover birria cooking liquid to remove any solids. This is your consomé! Adjust consistency by adding more beef broth as needed. Heat gently.
Step 6: Assemble the Tacos
- Warm the corn tortillas (you can do this in a dry skillet or microwave).
- Fill each tortilla with the shredded birria, and dip in the consomé.
- Garnish with cilantro, white onion, lime wedges, and your favorite toppings.
Tips for the Best Birria Tacos:
- Don't skimp on the chiles: The chiles are what give birria its signature flavor, so use a good quality blend and don't be afraid to adjust the quantities based on your preference.
- Slow and low is key: The slow cooking process is essential for tender, flavorful meat. Don't rush it!
- Make it your own: Feel free to experiment with different chiles, spices, or meats to create your own unique birria recipe.
